Description

Indulge in homemade flaky chocolate croissants that are truly worth the wait. These delightful pastries elevate any breakfast or brunch experience with their rich chocolate filling and buttery, layered dough. While the process requires some patience, the sweet aroma and satisfying texture are well worth the effort. Perfect for special occasions or cozy weekend mornings, these croissants promise to become a favorite treat.

Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk
  • 1 cup unsalted butter (softened)
  • 2 tbsp all-purpose flour (for butter layer)
  • 1 cup chocolate batons or semi-sweet chocolate
  • 1 tbsp milk (for egg wash)
  • Confectioners’ sugar (for dusting)

Instructions

  1. In a large bowl, mix the flour, sugar, salt, and yeast. Gradually add cold milk until combined. Knead for about 5–7 minutes until smooth, then let it rest covered for 30 minutes.
  2. Prepare the butter layer by placing softened butter mixed with flour between parchment paper; roll into a rectangle and chill until firm.
  3. Roll out the rested dough, encase the butter layer inside, and fold into thirds. Repeat this rolling and folding process three times, chilling between each step.
  4. Cut triangles from rolled dough and place chocolate at their base; roll tightly to form crescent shapes.
  5. Preheat oven to 400°F (200°C). Place croissants on lined baking sheets, brush with milk wash, and bake for about 20 minutes until golden brown.
