Ingredients
- 2 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet instant yeast (7g)
- 1 tsp salt
- 2/3 cup whole milk, lukewarm
- 2 tbsp unsalted butter, melted and cooled
- 1 cup unsalted butter, cold (for layering)
- 1 large egg (for brushing)
- Optional: chocolate chips or Nutella
- Optional: almond paste
Instructions
- In a large bowl, whisk together flour, sugar, and salt. Add yeast and mix until combined.
- Pour in lukewarm milk and melted butter; mix until a shaggy dough forms.
- Knead the dough by hand or with a mixer for about 5 minutes until smooth.
- Shape the dough into a ball, cover it with a cloth, and let it rise in a warm area for approximately 45 minutes until doubled in size.
- Roll cold butter between parchment paper into a square; chill until firm.
- Roll out the risen dough into a square and enclose the chilled butter completely.
- Laminate the dough by rolling it out and folding it several times while chilling in between.
- Shape the laminated dough into triangles for croissants and let them rise again for one hour.
- Brush with an egg wash before baking at 400°F (200°C) for 20-25 minutes until golden brown.
