  • 1 tsp salt
  • 2/3 cup whole milk, lukewarm
  • 2 tbsp unsalted butter, melted and cooled
  • 1 cup unsalted butter, cold (for layering)
  • 1 large egg (for brushing)
  • Optional: chocolate chips or Nutella
  • Optional: almond paste

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt. Add yeast and mix until combined.
  2. Pour in lukewarm milk and melted butter; mix until a shaggy dough forms.
  3. Knead the dough by hand or with a mixer for about 5 minutes until smooth.
  4. Shape the dough into a ball, cover it with a cloth, and let it rise in a warm area for approximately 45 minutes until doubled in size.
  5. Roll cold butter between parchment paper into a square; chill until firm.
  6. Roll out the risen dough into a square and enclose the chilled butter completely.
  7. Laminate the dough by rolling it out and folding it several times while chilling in between.
  8. Shape the laminated dough into triangles for croissants and let them rise again for one hour.
  9. Brush with an egg wash before baking at 400°F (200°C) for 20-25 minutes until golden brown.
