  7. Roll again into a rectangle and fold into thirds like a letter; chill for 30 minutes. Repeat this process three times.
  8. Roll out final dough into a large rectangle and cut into triangles; roll each triangle from base to tip to shape croissants.
  9. Place on a parchment-lined baking sheet and let rise for about an hour until puffy.
  10. Preheat oven to 400°F (200°C) and brush with beaten egg before baking for 15-20 minutes until golden brown.
