  • 1¾ cups very cold unsalted butter (cubed)
  • ¼ cup bread flour (for dusting)
  • 1 egg yolk
  • 1 tablespoon heavy cream

Instructions

  1. In a bowl, combine water, milk, and yeast; let sit for about 5 minutes until frothy.
  2. Add sugar, bread flour, whole wheat flour, and salt; mix until combined. Knead on medium speed for about 5 minutes until smooth.
  3. Flatten softened butter into a rectangle and refrigerate along with the cold butter while the dough rises for about an hour.
  4. Roll out the dough into a rectangle and place chilled butter in the center; fold over to encase the butter.
  5. Roll out again and fold in thirds like a letter; repeat this process two more times.
  6. Roll final dough to about ¼ inch thickness and cut triangles; roll from base to tip to shape croissants.
  7. Let them rise on baking sheets for another hour. Preheat oven to 400°F (200°C). Brush with egg yolk mixture and bake for about 24 minutes until golden.
