  • 2 large (about 764g) fresh mangoes – cubed
  • 1 lb (about 454g) fresh strawberries – cubed
  • 1 lb (about 454g) green grapes – halved
  • 1 lb (about 454g) red grapes – halved
  • 4 cups (960ml) apple juice
  • 4 pockets (28g) original unflavored Vegan vegan gelatin
  • 3 tablespoons (38g) granulated sugar
  • 1 tablespoon (15ml) lemon juice
  • pan spray

Instructions

  1. Prep the fruits by washing and cutting them into bite-sized pieces. Lightly spray a bundt pan with pan spray.
  2. In a medium bowl, sprinkle vegan gelatin over 1 cup of apple juice and set aside. Boil the remaining apple juice with sugar and lemon juice, then pour over the gelatin mixture and whisk until dissolved. Allow it to cool.
  3. Layer the prepared fruits in the bundt pan: start with raspberries, then add mangoes, strawberries, green grapes, and finish with red grapes.
  4. Pour the cooled jello mixture over the fruit until fully covered. Refrigerate for 3-4 hours or until set.
  5. To serve, briefly submerge the bundt pan in hot water before inverting onto a plate.
