Ingredients
- 2 cups sushi rice

- ¼ cup rice vinegar
- 1 tbsp sugar
- 1 tsp salt
- 2 chicken breasts (diced)
- ¼ cup soy sauce
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 avocado (sliced)
- Sesame seeds (for garnish)
- Fresh cilantro (for garnish)

Instructions
- Rinse the sushi rice under cold water until clear. In a rice cooker or pot, combine the rinsed rice with water and cook according to instructions. Once done, stir in rice vinegar, sugar, and salt while warm.
- In a bowl, mix soy sauce, honey, and sesame oil. Add diced chicken to marinate for about 10 minutes. Heat a pan over medium-high heat and cook the chicken until caramelized and fully cooked.
